Looking for Korean shabu-shabu near Yeoksam or Gangnam Station? Deungchon Shabu Kalguksu, Eonju branch, is a short walk from Yeoksam Station. One pot gives you three courses: beef and vegetables first, then knife-cut noodles, then fried rice cooked in the last of the broth.

To be upfront: I run this restaurant. I wrote it for visitors who don't read Korean. The facts come from our own menu and our customer reviews. Where I am not sure of something, such as opening hours, I point you to the map instead of guessing.

What is shabu kalguksu? Three rounds in one pot

Shabu kalguksu is a Korean hot pot meal that changes as you eat. The pot comes to your table with broth and a pile of vegetables, and a burner keeps it simmering in front of you.

Round 1: shabu-shabu. Thin slices of beef go into the broth together with minari (Korean water parsley), mushrooms and bean sprouts. The beef is ready in seconds, so don't leave it in too long. If you haven't had minari before, it is fresh and herbal, and it softens fast.

Round 2: kalguksu. By the time the beef and vegetables are gone, the broth has picked up their flavor. That is when the noodles go in. Kalguksu means "knife noodles": flat wheat noodles that were traditionally cut by hand.

Round 3: fried rice. At the end, ask for bokkeumbap. Rice is stir-fried right in the pot with the little broth that is left. In our reviews, this noodle-and-rice finish comes up again and again.

Can't pick a broth? If you are not used to Korean spice, start with clear. If you like heat, go spicy. Perilla is thick, nutty and a little earthy.

Sari Pyeongmyeonok: cold noodles in the same space

Inside the same restaurant we also run Sari Pyeongmyeonok, Gangnam branch (사리평면옥 강남점). It is a shop-in-shop for Pyongyang naengmyeon, the cold buckwheat noodle soup from North Korea's capital that many Seoul locals love, and yukgaejang, a spicy shredded-beef soup. It works mainly as a delivery kitchen, so you are most likely to see it on Korean delivery apps rather than as a separate dining room.

一锅吃三轮：先涮牛肉、水芹、蘑菇和豆芽；再下韩式刀切面；最后用锅里剩下的汤做炒饭。
